Pumpkin Spice Chia Pudding Cups

Fall flavours + chia pudding make for a perfect fall snack

Yield: 4 x 125 ml pudding cups

Prep: 5 minutes

Chill time: overnight

Assembly time: 5 minutes

Part 1: Pumpkin Spice Concentrate

Ingredients:

4 Tbsp pumpkin puree

2 Tbsp maple syrup

1 ½ tsp vanilla extract

1 tsp pumpkin pie spice*

*skip the store bought variety and make it at home with my simple recipe here

Directions:

Combine all ingredients in a small bowl.

Store in a sealed container in the fridge for up to one week. Freezes well.

Part 2: Chia Pudding

Ingredients:

1 400 ml can full fat coconut milk

1 Tbsp maple syrup

4 Tbsp chia seeds

Mix together and soak overnight

Blenderize for 30 seconds for a uniform consistency

Assembly:

Portion 1 tsp to 1 Tbsp Pumpkin Spice Concentrate into the bottom of 4 small (125 ml) mason jars or other clear serving dishes.

Portion approximately ½ cup of chia pudding into each dish.

Garnish with additional pumpkin spice concentrate and toasted pumpkin seeds.
